Three vegan breakfasts with no soy or gluten

Breakfast is the meal most people leave nearly empty of protein. These three are vegan, soy-free and gluten-free, and each one gets you to twenty grams or more without much effort.

1. Chickpea flour omelette

Whisk about half a cup of chickpea flour with water, a pinch of salt and turmeric, pour it into a hot oiled pan and fold it over spinach and tomatoes. Around ten grams of protein on its own, so serve it with a side of beans or a pea protein drink to get past twenty.

2. Protein porridge

Certified gluten-free oats cooked in pea milk, with a scoop of pea protein stirred in at the end and three tablespoons of hemp seeds on top. Comfortably over twenty-five grams, and it keeps you full until lunch.

3. Pea protein smoothie

A scoop of pea protein, a glass of pea milk, a banana, a spoon of almond or peanut butter and a handful of frozen berries. Two minutes in a blender and well over twenty grams.

Pick the right milk

Pea milk carries real protein, typically around eight grams a cup. Most oat, almond, rice and coconut milks carry almost none. Check the label, and pick a pea milk that says soy-free and gluten-free.

Is chickpea flour gluten-free?

Chickpeas are naturally gluten-free, but flour can be milled alongside wheat. If you have coeliac disease, buy one labelled certified gluten-free.

Can I make the omelette ahead?

Yes. Cook two or three, cool them, and keep them in the fridge for a couple of days. They reheat in a pan in a minute.

Is a smoothie enough for breakfast?

With a scoop of pea protein in it, yes. It is a perfectly good breakfast on a rushed morning.
